Scotland • Edinburgh

This summer, me and my boyfriend went to Edinburgh and its is an understatement to say that we loved the city. l o v e d .

I can't grasp what it is exactly but there's something about the architecture and landscape that just amazes me. Moreover, I do adore the "greyness" of Scotland! We were actually really lucky with the weather but I even would have loved it if it had been raining all day :-) I really like rainy days! However, since a picture says more than a thousand words, here come the pictures...

vegan pizza (mine) with a spelt base - very nice

this is the kind of gloominess I so adore...

vegan dessert and smoothies - can't get enough of it!

 veeery yummy Indian food :)

Arthur's Seat - such a nice walk with an amazing view

hummus falafel sandwiches for lunch - so good

and of course: The Edinburgh Castle :)

This was so so so good!! Vegan Jacket Potato from a very small place called The Baked Potato shop

This is actually right in the middle of the city - It's so amazing to suddenly be surrounded by nature!

Vegan burgerrrrr (one of my all time favourite dishes ;) )

Our last night in Edinburgh: Vegan Haggis and vegan quinoa burger with baked potatoes from an all vegetarian restaurant with lots of vegan options. It was particularly hard to chose from all the dessert choices. Luckily, my boyfriend was already quite full from the main meal so I could get half of his dessert as well :) loooove desserts

OOTD • Autumn

Just a sweet and short Outfit of the Day.
Autumn is my absolute favourite season of the year and thus I also really enjoy autumnal outfits :) It is not too cold and you don't have to wear super warm and big coats yet. Nevertheless, you can still combine nice jumpers and beanies with very nice jackets. Plus I loooove my new Vans slip ons, they are definitely one of the most comfortable shoes I own.

Beanie: Carhartt
Shoes: Vans Slip ons
Jeans: Cheap Monday Second Skin
Top: Zara
Jacket: Topshop

Sunday Walk ♡

Last week, I was feeling a little bit down. I just handed in my master thesis (about ecocriticism) and wasn't really content with the result. This always happens to me and after each big project, I kind of fall into a black hole. While working on a paper, I will always be distracted and once I've delivered it, reality hits hard. Additionally, my parents were abroad, my boyfriend on a tour and my roommates headed to their hometown for the whole weekend. So I was feeling pretty lonely and decided to get out of the apartment for a bit and go for a long walk in the forest.

It's fantastic how much a bit of fresh air and a new scenery can do for your mental health. Henry David Thoreau is someone I really admire and "Walden" is one of my favourite works. I have thus added some pictures of my walk and annotated them with some of his quotes. (I know very sophisticated :) )

"pursue some path, however narrow and crooked, in which you can walk with love and reverence"

"I have never found a companion that was so companionable as solitude"

"a morning walk is a blessing for the whole day"

"not until we are lost do we begin to understand ourselves"

"Nature will bear the closest inspection. She invites us to lay our eye level with her smallest leaf, and take an insect view of its plain"

p.s. I'm aware that Thoreau probably wouldn't have been that supportive of selfies ;)

• What I Ate Today •

I thought I would just show the meals I ate today since I'm obsessed with looking at pictures of other people's meals. Since I haven't been vegan for that long I find it always so inspiring to see what others choose to eat.
Starting with breakfast, I always need to have some fruit but also like to add some oats or flakes. That day, I went for a banana smoothie with pure organic cacao powder and a bit of oatmilk. I topped it off with soy flakes, coconut flakes and frozen grapes (I only just recently "discovered" frozen grapes. I really like it, and it's nice to just have them in store in the freezer).

Continuing with lunch, I chose to have a quinoa salad with rocket, cherry tomatoes, and yellow and red peppers. I really enjoy making quinoa salads because they are super tasty and super fast and easy to make.

Time for dinnerrrrrr. Today, dinner consisted of falafel nuggets, brown rice and broccoli. I'm totally in love with broccoli because I just really like the taste. This was the first time I made falafel nuggets myself. I made them from a ready powder to which I only had to add water and afterwards fry them in the pan. However, I really want to make all home-made falafel. So that's a future aspiration of mine :)

I also want to say that this is not all of what I ate today (obviously:)) But I tend to not have special snacks. In the morning, I always have more fruit (today I had two kiwis) and in the afternoon I will have rice cakes / carrot sticks / cucumber / nuts / raisins / dark chocolate. Today, I just had some ricecakes with peanut butter.
With regard to my diet, I'm not superhealthy and I don't follow any particular guidelines (like Rawtill 4, 80/10/10, ...). It has to be vegan of course and I focus on having a lot of whole foods like fruit, veggies, rice, potatoes, beans. However, I will also have processed foods and treats when I feel like it.
